New Monitor issue with Gain and offset

Just got a new Dell U3011, which has Gain and Offset controls for RGB. The default for Gain is 100%. When I calibrated with Spyder 4 Pro, I had to reduce the blue and green just a bit, but that did the trick.

When it came to brightness which I wanted to set to 120, I started out with a default of 50%. Even when I reduced it to 0%, I could only get the brightness to 125. Should I just leave things there, or should I reduce each of the RGB's to 75% each, and then repeat the above. Will that allow me to reach a lower brightness of 120 or less?

And how do I use the Offset controls, or should I touch them?

Yes I have the Elite version ( sorry I missed the fact you were using the Pro version )
Manually set the White point, Gamma, Black Luminance and White Luminance either use the Ambient measurement suggested or over ride it and use your values only. You set Red Green Blue Gain only if needed based upon the chart in the expert console ( You basically adjust to line up the RGB values until the bar is even on the chart). It also gives you advanced analysis options at the end of the calibration. I found this mode to be the most accurate and therefore I only use the expert console. I tried both methods and the expert mode gave me a very accurate calibration.
