I dont think the rebel XT is letting you down, would have the same problems with the 5d. There is something wrong with the perspective in the full length shot. Are her legs really that short? I doubt it, you could resolve this by moving back, and bending your knees. This is my wife shot last year on a 10d with 17-40mm 100 ISO F11 125s using Elinchrom BX heads

Yeah she is pretty short. She stands about 5'1", very petite. I am very happy with the XT but everybody knows you want to upgrade some time or another. Thanks for all help.:D

1) I agree, she's gorgeous.
2) Yes, they look a little soft. Some resizing (resampling) algorithms work better than others. If your software gives you a choice, try "bicubic" resampling.
3) The fact that her legs look short in the second shot is partly due to the perspective from being so close. Try moving the camera further away and zooming in for full-length shots.
4) Did I mention she's gorgeous?
