Horizontal Camera Support?

I am trying to learn food photography and I notice a lot of images I like are ones where the camera is directly overhead and parallel to the table or work surface so that the image is looking straight down on top of the food. How is this accomplished without seeing the tripod legs in the view? I am assuming it can be down with longer focal lengths, but is there also an accessory or attachment that can extend the camera over the table away from the bulk of the tripod legs?

I like the combination of the Manfrotto 055XPROB with the Induro BHD2 head. Would this be a decent setup with my 60D and any lenses from the 70-200 f/2.8 IS II all the way down to a 10-22? I'd like to buy once and be good for all my intended uses in the near future. I understand that if I ever upgrade to the longer faster (heavier) lenses, I'd need to reevaluate my support. Thanks in advance for any thoughts or suggestions.

Anyone with any experience with the straight down food shots or the 055XPROB and/or BHD3 care to comment?

You know your tripod has horizontal support, right?

Yup. The column on the 055 you're waiting for can be switched from vertical to horizontal, allowing your camera to be positioned over your subject. For greater flexibility you may want to chack out the Gitzo Explorer series (external link).

The benro gives you much greater flexibility switching between vertical & horizonal. I have the benro and it it works very well.
