How does this happen? One tree in the absolute middle of no where.

In farm country around here, that tree is a marker for farmers and could be a property line in a section. They would draw an imaginary line from that tree in whatever direction. The land on the left is yours and the land on the right is mine type thing.

Edit,
A section is one square mile and that is why you see most grid roads in a rural areas 1 mile apart going east/west and north south.

There is 640 acres to a section. A farmer could own/rent 1/4, 1/2 or the entire section. That makes a good reference point to divide the section into quarters.

Nice image by the way. I've been looking for a tree like that but am looking for one that is a little more scraggly looking.

Because it wasn't mowed like the rest of the field. The best trees visually are trees that are along by themselves. This is because they have room to grow, and get light from all directions. These trees can grow fully instead of just upwards.
