Sounds like the tripod movement wasn't the real cuprit here, but your settings and technique. If you want the easiest, reliable method, learn a bit about the hyperfocal distance and how that can guarantee your shot to in focus, no matter what the lighting conditions are.
You can also use the infinity setting on your lens, set it and forget it type thing. But, beware, you need to actually test your lens in good light, to find the true spot of infinity on your lens... memorize that spot, and voila - easy to focus in pitch black.
