I don't think of it as either one. If it must be categorized as a type of food, however, the proper category is "meat." Within that category, it would be an actual meat.

You can look up these things in some cookbooks, but my interest in them isn't as a menu item.

I came across the photographic subjects legally. I believe their meat is considered a delicacy by some people.
