So I"m going through some old photos and starting to build a better portfolio and have a copyright/watermark year question. Should I base this off the year the photo was taken, or the current year? And if the current year regardless of when it was taken, should I update this next year when it turns 2014? Thanks in advance.

In the US, placing a copyright symbol or the copyright year on a piece of work is irrelevant. A watermark on the other hand is not. And make sure you are up to date on your registration.

Year of first publication.

Publication used to be the key date but for work created after 1 January 1978 copyright now starts from the date of creation http://www.copyright.gov/title17/92chap3.html#302 (external link). If the work pre-dates that then other rules apply.
