I was only there for 5 days and we had some pretty terrible weather for much it so we couldn't do as much as we would have liked, but I can say the Napali coast is a must do. Specifically, I would recommend hiking the Kalalau Trial to Hanakapi'ai Falls. Depending on your conditioning, it is a fairly strenuous hike, but it has great views and a fantastic payoff with the Falls.

Also, starting at Shipwrecks Beach in front of the Grand Hyatt, you can hike along the coast along the Maha'ulepu Trail to Maha'ulepu Beach which is fairly secluded. While we were there we came across a Monk Seal sleeping on the beach.

I have heard Waimea Canyon is fantastic, but I can't vouch for it because we drove up to it but couldn't see 10 feet in front of us due to fog.
