is there a way to water mark my images with the file name or with a sequential number? im trying to simplify proofing so my customers can easily tell me which images they want without looking for the file name.

No, there is no automated way to add sequential watermarks to a set of images. You would have to select the text watermark option, then edit the watermark text for each image before applying it - not even close to what you want.

How about displaying the images using a gallery that allows captions or titles. It would still require you to write them manually but I think it would still be better that editing manually in LR.

Alternatively maybe another piece of software could do what you want (sorry, no suggestions as to which package I'm afraid).
