Pies in the oven, turkey getting prepped. House starting to smell delightful.

How's the turkey coma going?

For an early Christmas present to myself I ordered a turkey deep fryer from TSC. Been wanting one for a long time and they finally had a good sale on. I really want to use it for making maple syrup. Got a 30 qt one so a whole lot can be done in one shot and all the heat and steam will be outside. Plus there is no yummier way to cook a turkey.

I have a turkey fryer and have used it twice for turkeys. I was not impressed with deep fried turkey. However, we use ours all the time for other things. It makes a fantastic wok heater getting the wok really good and hot. We boil corn, fried shrimp in it a few times, even steamed a boat load of veggies in there. It's really handy for a lot of stuff.

The first time I had deep fried turkey was years before the general public was doing it. The dealership I was working at would have a summer BBQ. The shuttle driver, Johnny, had at one time owned a catering business. When he sold the business he kept some of the equipment. That turkey was cooked perfectly. Nice crispy skin, very moist, excellent flavour.
I imagine there are tons of uses for the equipment. Big frying pan would be nice on it. Would be a really handy cooking setup for camping. I know that as soon as my family finds out that I have it they will be asking to borrow it.

I have deep fried a few dozen turkeys over the years. Friends and family always ask for it. I like to do some different injections, but a Butter Creole type is one of my favourites. Often I will do two turkeys back to back, and while the last one rests, throw in a batch of sweet potato fries for good measure.

Done properly, deep fried turkey is fantastic, very flavourful, and oh, so juicy. Rarely is there leftovers, as everyone just keeps picking until it is all gone.

One of our favourite summer BBQ gathering things to do when we have a few dozen people over at a time, is to deep fry a turkey, and smoke some pork butts to make into pulled pork. Both get served with sauces, and are put on big fresh buns. Always a hit.

The pot and big ass burner is great for other things as noted too. You can drop a couple dozen ears of corn in, and have it back boiling real fast.
