I've had lasagna made with zucchinis and it's ok as long as there is a lot of cheese in there as well. Its the veggie lasagna with no cheese that sucks really bad.

If it has no meat and no cheese, it's just vegetables and noodles - or strips of zucchini. That is obviously not lasagna. That's just layered veggies. Calling it lasagna is heresy.
