Vegetarian friend of mine told me she made her lasagna with zucchini instead of noodles... I just don't understand.

That isn't lasagna...that's goat food.

Not sure I've ever had eggplant.

It's slimy and gross. :(

Not sure why, but call me JJ.

Noodles, meat, tomatoes, cheese. Only difference is it adds eggplant and a cream sauce. Try it. You'll like it!

I didn't think moussaka had noodled but was covered with bechamel sauce.

Aubergine... It depends on how you cook it, like Okra (Lady Fingers). Cook it the right way, and it is absolutely delicious.

Yup.

I like growing them as I like the way they look, but I'll feed them to other people only! Although I'm sure I wouldn't mind if it was mixed in something so thoroughly that I didn't notice it.

My brother, until recently, has been a life long vegetarian - not by choice. He has PKU ( http://www.mayoclinic.org …s/definition/con-20026275 (external link) ) and cannot eat protein. He's lucky as he has a very mild case. He is now part of an experimental drug study that, however it works, is allowing him to leave the vegetarian life.

Mom was always inventing new vegetable dishes to give him some variety. And since we have the space, we have always had extensive veggie gardens. One dish that she came up with is what we call Tim's Slop. Zucchini, yellow zucchini, crook neck squash, straight neck squash, tomato, onion, and some spices would all be sliced up, cooked thoroughly, and canned. Basically whatever we grew that year. Several years ago I grew some eggplant and made a batch with it. He liked it, but he likes that kind of stuff.

There is no right way to cook okra. Talk about slimy, nasty stuff. YUCK

I like lasagna if it looks like pizza, tastes like pizza, and is made like pizza with the exact same ingredients as pizza.

Ahhh, that sounds like a lasagne I could actually eat!

Yea, okra is pretty nasty but it works well as a thickening agent.

I totally agree, egg plant and okra are both great, when cooked and prepared right. While I LOVE a good lasagna, one of my favourite dishes done right, full of yummy cheeses, meat and sauce, I still will enjoy an eggplant lasagna. Sure it is not the same at all, and maybe should not even be called lasagna, but it can still taste great. I have a friend who has made one for years now, and I always look forward to it.

I just love a diversity in food, and there is little that I will not eat. While I have some favourites (like traditional lasagna), I truly enjoy most any food cooked well, and love having diversity in what I eat.

Neither are visually appealing but I would still try them.

My friend (and occasional boss) stopped by to pick up some tools. He decided to help me out with my snow pile that I'm building off the side of the deck. Sure beats shoveling!
