Vegetarian friend of mine told me she made her lasagna with zucchini instead of noodles... I just don't understand.
That isn't lasagna...that's goat food.

While I LOVE a good lasagna, one of my favourite dishes done right, full of yummy cheeses, meat and sauce, I still will enjoy an eggplant lasagna. Sure it is not the same at all, and maybe should not even be called lasagna, but it can still taste great. I have a friend who has made one for years now, and I always look forward to it. -JIM-
