i shoot biking videos with my 7D and im probably not using the settings right but im getting some terrible quality heres a sample http://www.pinkbike.com/video/327772/ (external link) it just looks amateur and it just looks bad, how can i dial in the 7D to get quality like this? http://www.pinkbike.com/video/334276/ (external link) yes, granted they are using way better equipment but i know i can pull way better quality from the 7D i just dont know the key, is it in camera processing or post editing? please help, thanks!

Thats exactly how 7D footage out of the card is supposed to look. There's no "quality" dial. If you want to get better video you need to shoot more and practice. The example link you want to get to has more than just one boring shot. They use full speed, slow mo, colorfully interesting locations (mountains, forests, etc), decent sun light, different angles, close ups of the action, far-aways, telephoto lens, fisheye lens, and light color-grading. Quality = shooting AND editing, not a single button you push.

Same as photography...first you realize what you need or don't like then you fix the problems.

White balance
Color correction
Contrast
Saturation
Exposure
Sharpness

Also are you shooting with the right shutter speed for whatever frame rate you use? For 24 fps use 1/50 shutter, 30 fps 1/60, 60 fps 1/120.

Also get a good video head if you plan on doing any pans or tilts.

I'm by no means a videographer, but it looks like it'd take a lot of effort to create a video like that.
It would take:
Better use of natural light.
Advanced rigs and panning thingies.
More dramatic angles.
More effort put into colors and white balance.
Slow motion (you probably need magic lantern for higher framerates like that)
