IMO universal plates are a bad idea. One of the main points in favour of A-S systems is the ability to get body-specific plates which give improved stability. Universal plates have the squishy rubber padding which reduces stability and allow the camera to move a bit when positioning (they can squish under the pressure exerted on the camera when you move it, then return to their original state when you let go of the camera, causing framing to change slightly).
