I'm rebuilding my kit and had sold off my 580exII...

Looking at YONGNUO Flashes, the 568exII in particular, but also the 600 and maybe another 580.

The 600's look great and are more expensive than the 580, but is it worth the extra coin? I'm a little sketchy on the Yongnuo...

Since you have 5DIII the 600EX-RT or Yongnou equivalent, soon to be released, are the best choice.
Not sure how you use speedlites but the radio triggering and remote control, especially Gr mode, are very handy.

I have some Yongnou manual speedlites (560s) as well as three versions of their triggers (602, 603, and 622c) Performance and build quality are fine equal to Canon in both respects. So, in that regards don't be concerned.

Very cool. Thanks for the reply. Should I wait on the 600 equivalent if I buy the Yongnuo? Or just pull the trigger on the 600ex now?
