I love these, physics at play. Is it just water or do you use soap and other stuff with different viscosities?

Water on its own is just too unstable, you have to mix additives with it to get the fancy shapes. I'm using a diluted xanthan gum mix with a few drops of household cleaner added, the cleaner reduces the surface tension allowing the drops to bounce higher.
