Can someone recommend (out of all the Photoshop CS2 books) that explains the use of curves?

It's not too complex, that link is a little long winded i have to say. Only my opinion of course

I don't know what good composition is.... Sometimes for me composition has to do with a certain brightness or a certain coming to restness and other times it has to do with funny mistakes. Here is the way I use it. It is not that hard and you get good results

1) Find the Darkest and Lightest spot in the picture and mark them using the 'Eye Dropper' tool (Hold Shift use the 'Eye Dropper').
Note: to use find the darkest and lightest part of the photo, goto Image->Adjustments->Threshold more the slider to the left until you can only see a small portion of black, that is the darkest point. Mark that using the 'eye dropper'. Move the slider to the right to find the lightest point. mark it with you eye dropper). Press cancel button.

2) Now you have the darkest point and the lightest point. Open curves. you will see 3 'eye droppers'. The one on the left is to set the black point, the one on the right is the set the white point. Click the eye dropper on the left and on you image click on the darkest section. Click on the right eye dropper and click on the lightest section.

3) Play with the curve to get the image as you like it.
