So, yes, we can do it your way, you are just not going to get a deal if we do. :)

As if that'll work. They'll just agree to this "spec" shoot and not buy anything. You still have expenses to actually do the shoot so you end up screwing yourself without even realizing it. Spec is for when there are a ton of potential customers at an event they have a vested emotional attachment to. It's not for planning, scheduling, and executing an individual boutique session.

and in both cases the bottom line will be - "no"
but saying it - especially in print/email can come back and potentially bite you in the rear...but delivering the message politely but still same bottom line - you can only gain ... or at least not lose....

my 2 cents
from a different non - photography based business with multiple clients

This, in reality, is the way I handle problems with any sort of client. Once I'm over my silly, self-righteous indignation, I try to approach the issue as though I'm acting on behalf of a number of other people (and sometimes that's the case). It helps me to remain objective and polite.

charge them for the session (labor) ...then set a price for each image file
