Got given a 350D for Christmas and to be honest, I'm still an absolute newbie.

Going to be going down to a bike park later with a few mates to test my camera on some moving subjects.

What sort of settings should I be using? or should I just stick to the pre-set 'Sports' setting?

Any help would be very useful.

Thanks :D

If you're a true newcomer to photography, don't worry about settings. The camera's sports mode or Program AE, the "P" setting on the control dial, will work well enough.

Typically, newcomers must work on capturing action. Spend your first outing figuring how to get the moving subjects in frame. Since, from your message signature, you have only a single wide-to-normal lens to use. that will mean you need to be in close proximity to the BMX racers to get the action properly framed.

After you approach the point of mastering basic action photography, you can work on other refinements.

The equipment you have will work well on just figuring out what you and the camera can do. Just don't expect miracles on your first attempt.
