Kin2son,
You don't have to "spell it out" to me. I was trying to pin you down to the actual words you used. When you say, "clearly focusing was not the problem . . .", and focusing was the problem, I am gong to call you out on that mistake.

Whether the camera has front/back focusing issues, or if the OP missed focus thru user error, it is a focusing issue either way. A user error in which the photographer misses focus is still a focusing issue, and the way you worded the last part of your rant is still wrong. Try to make sure that every sentence you write here is absolutely accurate, and can stand on its own as an accurate statement. Otherwise, what you type may be wrong due to careless wording.

What is this word, "thru"? ;)

I can resist anything except temptation

Oscar Wilde.

The modern spelling for the word "through". It is now more commonly spelled "thru". Why did you ask? Did you really not know what word it was? If you did now what word it was, then you should not have asked the question, you should have made a statement instead. Asking something that you already know the answer to is deceitful and underhanded.

"Your" and "you're" are different words with completely different meanings - please use the correct one.
"They're", "their", and "there" are different words with completely different meanings - please use the correct one.
"Fare" and "fair" are different words with completely different meanings - please use the correct one. The proper expression is "moot point", NOT "mute point".

I just want to mention that the only thing i have done different in my camera was to change the setting from just Raw uncompressed, to jpeg+raw uncompressed not sure if that would have made a difference or kind of re set something?

Resolve what issues? All of your questions have been fully answered. Not exactly sure what else there is to discuss?

Keep shooting, keep learning.

Woooooo. Looks like I hit a nerve!

Since you seem puzzled, and apparently missed the emoticon marker to signify this, be aware that I was being ironic. Your diatribe against inaccuracy in posts, coupled with your blatant usage of a dubious neologism, triggered this response in me. As I further indicated in the Wilde quotation, it was a temptation I could not resist.

Regards to Jerry. ;)

If I do any 100% crop comparisons, I will do something like this. This helps me identify focusing issues, ISO performance, etc. This being a landscape shot, just about everything was in focus, so nothing to identify in this particular scene.

7D ISO 1600

Yes better. Have a think about why the last landscape and helicopter shots are better..

Neither are against the light.

The landscape is with the light behind you and with some nice broken cloud to make the sky interesting.

The helicopter fills more of the frame and again the light is coming in from the side..

Tip. If you're taking picture of birds and aeroplanes in the sky, unless you can pretty much fill the frame, there is a likelihood that the subject will end up underexposed. This is due to the way camera metering systems work. One or two stop of EV compensation are often useful in my experience.

Those two shots should help you to have more confidence in your equipment. The improvement has nothing to do with the RAW+JPEG setting and everything to do with composition and lighting.

You can't erase a dream, you can only wake me up.

The above pic shows that you are expecting more out of your gear than it is capable of accomplishing.

A small object 100 yards away at 300mm is just not realistic, in my opinion.

No matter how you or anyone else tries, a $300.00 kit camera and a $200.00 kit lens is not capable of giving results that a $5,000.00 camera and $10,000.00 lens will produce. Unfortunately, the OP is expecting high priced results from low priced gear.

i think it would be helpful and very very constructive, if this site was united in providing a help list of potential settings to get the best out of most makes of camera

All the models of cameras is different, and all the users of this site is different, so this "settings to get the best out of most makes of camera" is almost impossible.

But as long as you trust the manufacturer, the best setting that will get the most out of most cameras from most makes for a beginner, are the default setting. And that is the setting most beginners use until they read too much in all these forums. The right time for using anything other than the default setting, is when you understand why you should use that specific setting, not just because you read that someone on the internet is using it.
