40D to 70D, will I be happy?

The 7D gives you the spot AF which is nice for more pinpoint accuracy, but the 70D gives you a flippy screen that might be better for product images (different angles etc), and about 1/3 better noise and detail rendering.

2mp (1mp in each direction) isn't going to make any difference, so that shouldn't really be any kind of determining factor.

Based on where you are now and what you want to do, just go with the newest offering, at least IMO. $999 from a good seller over on FM for example:

40D to 70D is the same upgrade I made in December and I have no regrets so far

IMHO no. The flippy screen alone should be a major plus for product photography... ;)

Unless you need the high FPS...

Controls will be a little different (no joystick or rear control wheel), IQ will be roughly the same, with better High ISO performance. The extra MP can be very nice, for cropping.

no joystick, but it does have a rear control wheel/rear wheel dial.
