Canon 5dmk3: AE-hold and focus point

I was playing with my friend 5dmk3 and it is amazing. I am looking to get it soon. I am confused regarding the AE-hold mode. I was able to lock the exposure using the spot metering mode and see "*" in the viewfinder. When I moved the focus point to another one, the "*"/AE-hold seems to disappear. Can someone point out the error for me or explain to me proper way to use the AE-hold?

If I'm shooting in Av mode, I will use AE-lock for Brenizer panoramas. It keeps everything consistent.

Why not establish your exposure based on an AV shot, then switch to manual exposure using those settings?

If I'm also shooting with AWB enabled, it will lock it to one value for all pictures in the set.

Besides, why bother switching to manual mode when the same result can be had by pressing one convenient button? ;)

AE-hold with spot metering only works with the center focus. To use it for other focus points, you'd have to use Evaluative metering. Canon could easily update the firmware to allow this, but they're being stingy and keeping that feature only for their 1Dx.
