I particularly like #3. Do a search on short vs broad lighting. For subjects that aren't real thin, short lighting will help thin a bit. Also, ask the subject to stretch their neck a bit so that the part of their face "pointing" at the lens is closer to the lens. This helps stretch the skin of the neck and chin a bit and if the focal length is long enough the lens will flatten the image and the viewer won't be able to tell, but the face will be better defined.
