Photoshop CC: Fonts: Multiple Fonts: Font Replacement

Do a Valentine's thing I created a line of text with some capital letters in it in Photoshop CC. I then realized that I had VALENTINEHEARTS font so I selected the text, went to the text menu (upper left) and selected VALENTINEHEARTS. Only the capital letters changed to the new font. But if I select all the text again and change it, all the letters change to the new font.

I'm guessing this is a (desirable) feature but I can't find anything that names, describes or explains it. How does one know which fonts perform this trick? Are there other font features that could be useful? Where is this behavior documented?

I have tried the Adobe Forum but after a day the only comment was simply a repeat of my question. I have also Googled with as many different keywords as I could think of but since I don't know what this feature is called I have come up empty.
