I'm set to travel for a couple of years starting this coming summer from Alaska all the way to Argentina by bike.This is a trip of a lifetime and as much as possible capture every moment of it so I'm a bit of a quandary over what lenses to bring to cover it all.
I own a canon 10-22, sigma 30 and tamron 28-75 but willing to buy if needed.

I'm pretty sure I'll bring the 10-22 so I need two more lenses and only willing to spend $2000ish for both. I'm limiting myself to 3 lenses unless the fourth one is super light.

Perhaps buy a 24-105 and 70-200? i'm wanting an 85 f1.8 since its cheap and cant go wrong with it. Would a 10-22, 85 and a 70-200 troika make sense to cover portraits, landscape and zoom?

I would suggest something different. If you have 2k to spend and you want 3 lenses and this would be to cover most all of anything that would come at you. I would highly suggest this:

Get a 6D! - The crop to FF low light ISO performance is 2 stops... excellent. Has GPS for travel and wifi also so you can on the go share to your phone and share to friends/family. It's light weight and small.

Keep and take your 28-75 since it will be a good general zoom for walkaround.

Pick up a 85 1.8 for your long end ~300 used

Pick up a 17-40 for your wide ~550-600 used

Selling off the 30mm 1.4 pays for the 85. Selling off the 10-22 pays for the 17-40 and you still have your $2k which pays for the 6D. You can keep your crop body if you want or sell it.

I would suggest some sort of stabilized lens also. If you think it's a good idea I'd just swap the 28-75 for the 24-105 which is perfect for travel.

85 1.8

Would make for a good light weight travel setup. I'd like to fit a wider 1.4 glass in there. Maybe ditch the 85 and get the 35 1.4 instead. Up to you. You'll find yourself in all sorts of places where 1.4 would come in real handy.

There isn't anything very long in the list? I would think there would be alot of interesting subjects that would only be accessible via glass. I would want something longer than 105mm. I know it would add bulk though. At a very minimum, even a slow zoom that at least gets into the 200mm range would be something to consider, maybe a 55-250 IS?

Having a crop and wanting something to travel with, but not compromise too much on DOF control and aperture, I would probably consider:
Sigma 18-35 f1.8
Canon 10-22
Canon 55-250 IS
Canon or Sigma 50 1.4
1.4 TC
Extension tubes (for macros of exotic flowers, etc)
Ton of batteries

Probably too much bulk? Not too much in expense either though, should something break or get stolen.

yeah I was wondering about the longer range too. but wow i didn't expect the suggestion of parting way with my 7D. I wont mind the bulk.

That seems to be the vogue trend these days, "scrap your crop and get the 6D". Sometimes high ISO and the FF field of view isn't always the leading factors in a decision. Not saying it's a bad option, it just seems to be suggested alot by all the 6D owners (of course it's to be expected). :)

There are some very good glass choices for the 7D, should you decided to stay with what is familiar to you. If you don't need all the bells and whistles and wanted to shrink your body bulk down, get an SL1 (cheap these days) and get the pancake lens, along with any other glass options. It will make a quick "pull it out and shoot" camera, very small footprint, etc. and would only cost around $400-425 in addition to any lens changes you make. Batteries and cards would take up less room/weight as well. Pick up an eye-fi SD card and send your pics to your phone and upload from there too, possibly.

If the budget permits, try finding the STM version. Around $200 USD from various sources, and worth it over the previous 2 versions, I believe. Not sure about what that might run to purchase/ship to Canada though. Maybe pick one up or have one shipped to a hotel room in the US as you pass through?

I spent 8 days at disney/universal with my 7D, 30mm 1.4, 24-105 and a tokina 12-24. Waking up and getting to the parks at 8am and leaving at 10pm = 14hrs x 8 days

the weight sucked.

7D isn't bad. I don't see anyting wrong with the lenses you have. Save the money for the trip. Maybe add the 55-250 or a 70-200

7D is weatherproof though i.e. more durable especially for trekking, climbing etc.

I would ditch the DSLR altogether.

Get a handful of capable little point and shoots with superzooms. You should be able to get a small bag full with extra batteries and chargers for less money and less WEIGHT than a DSLR.

So...bring the 30mm, 10-20(almost the same as the 12-24) then buy the 55-250 then?
