Auto Exposure Video

I went out a few days ago and shot a time lapse (I guess it's not truly a time lapse, because it was video) with a 7D.

As you can tell throughout the video, at certain parts the video kind of "flickers" as the camera auto-adjusts the exposure throughout. Also, once it got really dark, the camera bumped up the ISO (I think) to compensate making the video really grainy (those parts I cut out of the video).

Is there a setting that I can change so that it doesn't auto-compensate for the light and the video just gets dimmer as the sun goes down?

Wow. I feel stupid now. I figured that the "manual" dial on the camera only affected still photography. Not the video mode.

I don't do much video, so I'm not sure, but I recall reading about that M is just that, all manual, while the other methods are all automatic, no matter which you select. This memory is from the user's manual, so check that. It should be described there.
