I don't care for HDR as it just doesn't look normal unless it's done very, very well. Photo 2 looks like a regular exposed image.

These photos look like they were shot anywhere from f/4 to f/7.1 (to guesstimate), and consequently there is plenty of depth of field in these shots. I think you mean to say you wish they were shot with less depth of field so that the backgrounds were more out of focus. Also, how do you propose adding / removing depth of field in post-processing ? It looks like you opted for the best view and the best blue sky rather than put the sun behind them to get a less contrasty more pleasing light on them. The last is my fave of the set.
