I just picked up a used 7d and started grabbing some super high iso footage to test it out. I noticed that there is at least one hot pixel (white) and one that is red.

Am I correct that there are no custom functions that 're-map' these pixels in the individual frames before they are compressed and collapsed into video on the camera ?

Also, does the re-mapping 'method' using manual sensor cleaning (which Chuck Westerfall himself suggests isn't a method at all) actually do anything ?

Finally, what is your process for removing hot pixels in post ? I'm using Adobe Premiere and futzing around with 4-pixel sized layer masks on a duplicated video layer, but I still haven't even quite figured out how that works, being totally new to Premiere.

That re-mapping thing is an internet rumor, but it seems to at least clean the dust off the sensor.
