We do a couple coaches games every year for our little league. These shots are from March, and we've got another game coming up this weekend, and I hope to take my new knowledge and get some better shots! Any advice is welcome, I'm using a 50D with a Sigma 70-300. TIA!

OK, if you know you have "exposure issues" why don't you correct them?

Well, I can't go back and retake the pictures! :). All I can do is better next time.

I did attempt to darken a couple to correct the issue, but I can never seem to get the contrast right, as you can see in #2). PP is not my strong suit, but I appreciate any advice to improve!

all it takes is software (Canon DPP, free GIMP, Lightroom, Photoshop, free Picasa, etc.)
But the exposure should be pretty close when you take the shot, if it looks like those pics then something has gone wrong.
settings?
metering mode - eval, spot, etc. ?

Your exposure situation is a pretty standard problem in baseball. To properly expose faces (which it appears you have done), in this case it means blowing out the dirt a bit or whites on uniforms. I'd change nothing in your shooting (maybe down a stop on exposure), but in post processing, simply use a tool (in Lightroom the Graduated Filter works great for this) to darken the dirt back to it's natural state. Or the Highlights slider to recover the white areas.

As to subject matter, avoid shooting pitcher from behind, or their back side (as in photo 1) as you lose their face. Also crop tighter using standard crop ratios (4x3 or 4x5).

In Lightroom use the radial tool. Put it on the face on with burn (darken) selected. Then invert it (button towards the bottom of the panel. It will darken the picture and leave the face alone
