Can anyone give a figure as to how much lighter my GT2531 might be if I replaced the center column with the Markins TB-21?

Or if you just in general have a compared a Markins base of some kind to what your gitzo pod weighed with the center column, I'm very curious what the actual weight savings would be. Thanks.

I have the TB 30 which saves about 190 grams on an old 1329. Given that mine is a 3 series your weight saving would be less, I would guestimate at 100/120 grams.
I haven't tried one but I do like the look of these:

Mine is a series 2. I think I'm going to stop short of the complete replacement hub as I'm going to want the option to go back to using the center column occasionally I think.

I am familiar with your tripod - I have one!
I haven't found any great advantage with my TB 30 (3 Series) but fancied the look of the TH200 for the increased rigidity (on my 2531) as I mainly use long (or very long) lenses. Converting back is only 3 bolts - so no problem for me.
