so all i have to do is download their color profiles, open my pictures in my image editor and either convert or assign whichever adorama profile i want, then adjust the image to my liking and send it off for printing?

I don't have any knowledge about adoramapix, or their profiles, but when working in a color managed environment you always convert, never assign profiles. The only time you would ever assign a profile is when you do not know the source file's profile. This is a highly unlikely scenario if you are working with your own images.

The usual workflow for using lab profiles can be found here (external link).
