I notice a lot of blog title has this "|" symbol in it. For example,

wedding | abc banquet hall | john and mary

Instead of

john and marry's wedding at abc banquet hall

Is the | symbol a more seo friendly way to write a title?

I use the pipe symbol a lot. I think it's helpful mainly because it allows you to remove functional words that otherwise dilute your title tag. The first words in your title are obviously weighted more than the last words.

But it's very possible that Google itself ignores these functional words in its calculations so it doesn't matter much for this purpose.

Another reason it's helpful is that there is limited room in the SERPS and links on your website for that title tag, so devoting space to 'a' and 'the' and 'and' sometimes isn't helpful.

Class A | Type One | Short Location | Date
Long Class B | T2 | Exceptionally long location name with extra bits of info | Date

Now consider skimming through a set of listings like those, as a human, when there are dozens of them, and try to quickly pick out one at a specific location? Seems like a good way to keep thing consistent and easy for a human to read through, and stay organized.

The "|" symbol is more reader friendly.

Less characters also mean more quality keywords can be picked up by search engines. "&" versus "and". I'd rather have the names I want finding in the title.

FWIW having client names in the page title is a waste of Google juice.
