Using the 7Dm2's back MENU button I access the AF tab. This will open access to three primary tracking parameters as defined in 6 different Cases (1-6). My questions: How can I create either a new Case 7 or change the verbiage of an existing Case.

For example change Case 1 to read "Birds in Flight" instead of " Versatile multi purpose setting".

I think you'll just have to remember that case 1 is whatever you assign it too- BIFs, HDR, Landscape, etc.
On my I set up C1 for BIFs and further that AF-ON is One-Shot focus and * is AI-Servo so with minimal movement
of my thumb I can go from one to the other.
