I've a McAlister waxed canvas field bag I want to use as a shoulder bag. I want a padded insert that I can adjust.

You might start by looking at the Domke inserts (external link). A couple of years ago they started making them with adjustable dividers permitting you to readjust the inner walls.

i use the one made by temba because it has the divider flaps that fold down

look into Trekpak- they make a customizable system that can adapt to most any bag- I use it and like it
