That's a good question... for me, photographing birds is a relaxing retreat from a modern world filled with incessant distraction. I can go birding for hours at a time, away from the bustle of everyday life, and just revel in that one singular focus. Many times I come away with no useful photos, but that's OK because the joy of it all is in process; yet, when you do happen upon that rare moment that it all comes together, it's immensely satisfying, and it's what keeps you coming back for more
Fishing is an apt comparison.
I kind of just described photography as a whole, yes, but... Birding and other wildlife photography gets you out of the house, further away from iPhone/computer/TV/video games/work/traffic/other humans/house work/deadlines/etc.
