I like the second. The first is fine too. The third is a bit too saturated for me.

The first is without Sharpening, the second with, third sharpening and saturation

Hey Bos, it's a nice pic. Did you set up this still life? There seems to have a bit of focussing fall off towards the end of the plate (from the banana to the back). It's not much though and it is still a good pic.

I set up the tripod and I'm really trying to see what settings seem to work best for me.
At times i think my pics are generally to "soft" and i wanted to eliminate camera shake or anything on my end. If you read any of my other posts today in the RebelXT vs Nikon D50 I really am not into doing post processing. I mean I love the photography stuff and playing with the different modes and settings, but I really want to find the best settings for different situations and acheive good results that way. Don't want to shoot in Auto or Program either. Usually use AV but at times I just am not sure what else I need to "adjust". From flash output to ISO to even Exposure compensation.
I haven't been able to find anything that gives you "general" settings to use in different situations. It seems I'm always fiddling around and taking shots over again and driving my family crazy at times.;)

I don't see that much difference between #1 and #2 . #3 does seem a little over saturated.
