So I have a project with a client of mine and she's wanting to do this with the balloon in her hands as a cover shot for her book. I know a fast shutter speed will be needed for the shot but are there any tips for pulling this off? Here's what I'm travelling with. 6D and 5D2, 2 yongnuo YN622C's, 580EXII, lighting stand and tripod, water balloons and a variety of lenses :). Can it be done with a 6D or 5D2 with the slow FPS?

Reminds me of splash photography where the actual shutter speed of the camera is moot compared to 1/25,000 second flash duration I'm sure your YN622C's, 580EXII is capable of at 1/64 power output. The issue is the timing, getting the ballon to pop/rupture at the exact time the flash goes off. It can be done with a needle in one hand and the other hand on the shutter button but trial and error may take many many shots to get what you want----better to have the shutter release tied to a remote that for example is triggered by the needle then tripping the shutter, like for example a laser beam interrupted trips the shutter.
Hopefully more will chime in with more suggestions.
Here is a step by step walk through and you'll see it helps to have an assistant, but in this demo no external sensor is needed:

Not a fast shutter speed, a very long one. You probably want to shoot it in the dark, so that you can just open the shutter and leave it open while making the shot.

You freeze the balloon with a flash, triggered by a microphone. My suggestion would be to use a pellet gun or something else that makes noise to break the balloon, so that the noise souce can trigger the flash in time.

I don't know where to buy a microphone trigger. I know somebody who made a shot like this once, but he's an electrical engineer and he made his own trigger.

As correctly said, it is not shutter or camera but the flash.
BTW the concept is not new and if you are interested in historical background of photography in this field (Really fun to know and nothing boring), see biography and search life history of Prof. Harold Eugene Edgerton.
Here is a hint for one of the first in the kind:LINK (external link)

There is a lot to learn from past.

flash to freeze and something like the Nero Trigger to get the shot. Set up and practice before at home and it'll probably still need a couple tests go get the timing right. The Nero trigger is great for other things, catching lightning, using a laser pointer as trigger (shutter goes once the laser gets interrupted by movement) etc.

Then you can play with colored water, milk, or flour etc in the balloon. Fun stuff :-)

40D, 5D3, a bunch of lenses and other things

In popping some water balloons while filming with a Phantom Flex 4K I was noting the manner in which the latex peeled away from the water. The direction of travel of the popping device appears to make a difference in the travel of the slit around the water mass. Using an Xacto knife the slit appears to move orthogonally (90 degrees) from the direction of travel of the blade. That might help in terms of the composition for your shot. In the example posted I would guess the puncture was made near the top with a downward motion.

Shooting with a 5DIII and Einstein flash on lowest power, the water is frozen about as well as the water in the Flex footage at 1000 fps, but pretty hit or miss in terms of getting a usable shot at ca. 10 fps. The sound trigger would probably be a big help.
