So I've read a good few of the AF advice lines for custom setting; but many are dealing with subjects moving side to side relative to the camera; or only moving slowly toward or at an angle. What I'm after is advice on settings for when you've a subject coming right at the camera; or at least at a sharper angle and thus moving a lot.
Specifically its the
C.Fn III -1 – AI Servo tracking sensitivity
C.Fn III -3 – AI Servo AF tracking method
Settings that I'm considering - used in conjunction with a single-point AF at a horse and ride coming toward a jump.

I get conflicting ideas. Both strongly suggest that setting the AI Servo AF tracking method to the second setting so that the camera keeps its lock on the point it finds and keeps it there is a good move; and that I would agree with since the only things that will get in the way will be distracting elements that I don't want the camera focusing on.
The AI Servo tracking sensitivity however is proving tricky. On the one hand once one has a lock one doesn't want the camera jumping off that lock and onto something else; on the other as the rider and horse move closer the "shape" will start to change and thus in theory one wants the camera to keep resampling its focus lock so that its always keeping a fresh lock on the changing shape of the subject as it draws close.
Each article suggests the opposite advice in this regard. So I'm curious as to what others here would use and why and what you've experienced.
