My first attempt at stitching...

Kind of new to photography, bought way too much equipment lol. Anyway, any input on making my pics better would be appreciated!!

Look at getting yourself a circular polarizer to really help tone down the sky.

Don't fret, I always bring too much equipment. Better more than regretting you left something behind. Agree that a polarizer might have helped with the sky. However, don't know what lens you were using. Be careful with polarizers and wide angle lenses (>28mm). They can cause a significant uneven effect on the sky. I learned this the hard way.The stitching itself looks good to me

I agree that a bit more contrast or dynamic range is needed to bring out your sky. However, a polarizer filter may not be a good idea when stitching. Because the polarizing effect depends on the angle to the sun, as you pan the camera the polarizing effect on the sky will change. You will wind up with a sky that is uneven, a result that is particularly worse with wide angles of stitching as your example above, and this is difficult to correct in post. Perhaps doing multiple exposures at each position (eg., +/- 2 stops) so as to add details to highlights/shadows.
