I don't know why "pants" is a pejorative in British slang. I rather like having pants to wear myself, and would feel rather deprived if someone were to take all my pants from me. And that's true whether we're talking about underwear or trousers; I like very much having both of them.
But there is a reason why many of the most serious filmmakers who use DSLRs still use Canon rather than Sony.
There are a number of "set up canon 5d iii for video" videos on YouTube, which is what I'd recommend you check out, especially the one by Philip Bloom. Most of these presume setting up the camera in such a way as to provide files with the best possible information for post-processing in order to get files much more lovely than merely setting the camera can provide.
That's because the code counts. In-camera processor code is optimized for high speed and compactness. Post-processing code--which has the luxury of gigabytes of code storage and multiple seconds of high-power computer cycles--can be optimized for image quality.
I also paid USD $8.00 for the very lovely "Cinema" Canon picture style by Cineplus. It's designed for quality results with the least amount of post-processing.
