Questions to Sony A7 owners

I recently borrowed one to try out to evaluate a potential purpose. I have a couple of questions (this is the plain jane original A7 model):

(1) Minimum shutter speed on Aperture priority mode: Can I set this? I have an RX-100 that doesn't allow me to set a min shutter speed, so might just be a Sony thing. Couldn't find it in the menus or anything.

(2) Can I keep the EVF on? So this is a bigger issue for me. I found out how to turn off the rear LCD, but it still seems like the EVF stays in "eye sensor" mode. I was hoping to do street photography a lot with this camera, and I like to compose with the EVF. I find that split second lag from when I put the camera to my eye to when the EVF activates to be an annoyance.

Other than that I love the IQ from this little guy, truly amazing.
