I tend to light the whole room.

But sometimes I light just a small area. However I never want the rest of the area to look like a black hole.

Sometimes I use direct light

Other times I like to bounce my light

Or use a combination of off camera and on camera

Bottom line, each wedding is different so for me, there is no "one size fits all" answer to your question.

For general dancing/partying shots where I am using my flash, my go to settings are f/4.0, iso 1000, 1/20-1/100. I have second curtain on my flash set and it is pointed straight up going through a diffuser. The only thing I adjust really is the flash power and thats based on my distance from the subject.

For first dance/toasting, I usually use all natural light with my 50L 1.2. I'll be at f/1.4, 1/125 and my iso is usually a little bit high but not a bunch of noise. If need be, I would just add a little pop of flash.
