Two shots as another batch was cooking.

Nice Frank, they look delicious and perhaps delicate. Do you mind a brief summary of how these are made? I have only had potato pancakes once and it was when I decided to make them for myself ... they were quite good. Mine had a different look than these above but I imagine the recipe varies based on location/culture.

Thanks for the inspiration to get these back on my plate.

Thanks for the comment! No, these aren't delicate at all. They're very crisp & crunchy. Did you notice the little bits sticking out at the edges?
For these, I grated 3 Russet potatoes with just the 1/4" holes & chopped the onions in 3/16" chunks. Used 1/2 c. flour. 1 egg.

Sure thing - fire away. The ones I made were from left over mashed potatoes and then flour, onion and egg, so, a slightly different texture. I topped mine with sour cream or Greek Yogurt and I have heard apple sauce is good. What did you use?

This is from July 2013 and reworked just now in LR CC 2015.1

Those look pretty good, too. I have a recipe using mashed potatoes, but have never tried it.
