I have noticed that the 30D has the ability to turn off JPEG sharpening in Camera. Does the 5D have this ability? IF so, I can't find it in the custom modes.

If you intend to store the jpeg versions then (on my 20D) you can adjust the amount of sharpening -- I don't know if you can turn it "off" totally.
