Here are a few from the Yucatan. I drove down from my home in Texas a couple of months ago.
I was amazed at the birds and how easy they were to photograph.

Edge of the mangrove trees.
This part of Mexico is the best water bird photographing area I have ever been too. Rio Lagartos is a small fishing village and about 25-30 KM from town there is a salt flat teaming with birds.
I drove down alone and had no problems finding the birds.
