What is the most popular item that people order from you (print, gallery wrap, album, etc.)

As I'm carving out my little part of the photo world, I have seen that a lot of the locals have TONS of options, so I am wanting to go the other way and only offer a few products to market a "simplistic" approach. I am also trying to avoid becoming a "shoot-and-burn" photographer, so including some type of prints or something seems the best way to go about that.

Naturally I want to offer the most popular stuff that people will actually want. I realize this will change with my own clients' needs and what I find to be true over time, but just starting out, what are your thoughts? I'm not super comfortable to call up the local competition and ask them, either -?

Type of photography - Mainly families, seniors and weddings. Weddings will of course get more options, but the families and seniors I would like to keep basic, sort of a "you make two choices and let me handle the rest" type of thing.

I'm thinking of offering:
Christmas Cards with preselected layouts
11x17 gallery wrap
10x10 premium album
8x10 and 11x17 prints
8x8 "parent" albums to give as gifts

Usage Licenses.

I very rarely have anyone interested in prints, or gift cards, or canvas wraps, or anything printed at all.

However, I sell many usage licenses every week. These licenses are for use in many different ways and on many different media, but the most common are for magazine content, print ads, online web page content, online ads, and calendar content.

The most popular license I sell is for "nonexclusive, one-time use".

"Your" and "you're" are different words with completely different meanings - please use the correct one.
"They're", "their", and "there" are different words with completely different meanings - please use the correct one.
"Fare" and "fair" are different words with completely different meanings - please use the correct one. The proper expression is "moot point", NOT "mute point".

I guarantee your most popular product for seniors will be web resolution images, to be used on social media. 4x6's and the occasional 8x10 are probably second.

For Weddings, the 'album' will be your pride and glory. Individual prints will also sell, but creating an album that tells the story of the 'special day' will be your biggest asset if you're good at it.
