Ah, something I forgot before - how to identify a perfect café:
A perfect espresso will taste well black - no sugar, no milk, no water dilution.
If that tastes good, you know they are really good.
BUT: Milk changes everything, so you could have a more fruity coffee that will taste sauer as a neat espresso but tastes great in say a Latte Macchiato.
Sugar can also mask badly made coffee - it is a possible solution for Starbucks coffee - yes, you end up drinking sweet syrup but you aren't burdened by the burnt coffee any more.
