I have an archive of about 2-3 years worth of photos (estimated 500-1000 gb), Most of it in RAW.
It is placed in folders with the date of the photography.

I would like to automaticly convert all of these to JPEGS, with the same folder-structure, but in another mainfolder or on another drive.

How do I do this the easiest?

I would use Photoshop Image Processor. File -> Scripts -> Image Processor. From memory I think it has a checkbox to include subdirectories and to maintain folder structure. Hit tab before you run IP, to hide some panels.

Suggest you let it run overnight or over a weekend. Could take a fair bit of time to run.

I have been toying with ImageMagick lately... I suggest checking their software out. It operates from the Command line, but the lack of a GUI makes processes work faster.

Mentioning what software resources are available to you, and what camera(s) those Raws are from, would probably enable you to receive a more relevant answer.

Not sure why you'd want to convert them all from RAW to jpeg, because these would all be unedited.

However, an "easy" way is to copy all the files/folders to another 2-3tb harddrive. I'd then pull ALL the photos up in Lightroom (if you have it) - with or without edits. Select all and export as JPG. Choose Export To: Same folder as original. After this is done, I'd run a search (Windows Explorer or Mac Finder) for all .CR2 files and delete them. Then you'd have all JPG files in the same folder structure as your original.

Or even easier, just select and delete the RAWS from LR.

Take a look at Photogrok:

This (free, scriptable) application may be helpful and give you the flexibility and control to export the images to a JPEG in the folder structures and EXIF embedding of your choosing - remember, most raw file formats contain a (often full-res) JPEG in them - it may be quicker to extract the embedded JPEG than it is to process each raw file to a rendered JPEG. For Canon cameras, the embedded JPEG will reflect the Picture Style and white balance settings set in-camera at the time of image acquisition.

If you're not overly concerned about the quality of the JPEG files, I believe this utility will allow you to keep the file structure intact.

DPP does this as well. Software that Canon wrote and comes with your camera purchase, or is downloadable.
