We're looking to get one of my friends or family members to use a70d just to record the wedding for our own memories. It does not have to be a professional quality but do you guys think this will be able to handle it and it inexperienced hands?

I haven't shot a lot of video for ages (and not weddings), but technically that camera should be more than capable. I'd definitely give it to your friends a couple of weeks before though, so they can get used to using it, and check the light at the venue - if you're backlit, you don't want to be silhouetted and this can be tricky for inexperienced shooters. We use a few different lens for it, all zooms. 2-R-6, 1-5D Mark 4, 3-5D Mark III, 5D Mark II, 2-7D's, 70D, canon 70-200 2.8 L IS II, 24-70L II, 85 1.8, 85 1.2, 50mm, 135 mm F2 L, 17-40 , 24-105, Sigma 35 Art and 18-35 1.8, 600 EX's, Elinchrom RX and Phottix 500 strobes

Personally I think shooting good video is even harder than shooting good photos so if you accept that it will be a fairly amateurish video then you'll be fine. Correct in you have to know what you are doing, but with the 70D and the right sliders and tripods, you can do some great things with that camera and the 80D as well. The trick is the editing.
