1. When I open RAW files taken with S7 in Lightroom the default profile is "Embedded". I don't think there really is a profile embedded as it seems way off.
If there were no profile embedded, Adobe would have to create and supply a profile, because without one you wouldn't see a color image on your screen - the application of a camera profile is the necessary first step in using Raw data to create a color image. When camera makers use their own proprietary Raw formats (CR2, NEF, ARW, etc.) they may embed their own profile or more usually they embed a number of profiles in the conversion software they supply. In either case it is not available to Adobe. Therefore, Adobe has to create at least one profile (called Adobe Standard.dcp) and for the leading brands and models they also create several more that are back-engineered imitations of the maker's profiles. But when the camera maker uses the DNG format (Adobe's own but open) they don't need to provide the conversion software, so they may decide to embed the profile so that it will be available to any software that can open and process DNGs, thus relieving Adobe of the need to provide one. Theoretically at least, this should be better than Adobe making the profile, so it is strange that you think it is "off". Perhaps you think that because you need to do some LR adjustments beyond merely opening the file, Try the Auto Tone button, for instance.
